There are two primary reasons why doctors recommend a waiting period before having sex after vasectomy. One is to allow the small opening on the scrotum to heal and the other is to allow the severed end of the vas closest to the testicle and its associated blood vessels to seal.
The vasectomy is a surgical procedure, albeit minor, but it is important to allow the area to heal and not be aggravated with undue activity. This will also limit swelling, bruising or the potential for a hematoma.
